Nutrients: High in potassium, Vitamins K, C, A and dietary fiber. 

Make Sure it's Fresh: Stalks should be 12-18 inches in length crisp with taut, shiny skin.

Storage: Discard leaves, refrigerate unwashed and wrapped tightly in plastic for up to 2 weeks.  Rhubarb freezes well.
