Make Sure it's Fresh: Choose firm artichokes with shiny, bright green outer leaves, and lightly packed inner leaves. In fresh artichokes, leaves should snap off when you pull on them.
Storage: Store fresh artichokes unwashed in a plastic bag in the refrigerator for up to a week. Cooked leftovers can be refrigerated for up to four days. To freeze whole cooked artichokes, drain completely, wrap tightly in foil, and pack in plastic freezer bags for 6-8 months.
